Question by Danny's Mommy 9/10/09: Cooking Chicken in the crock pot?
I have a crock pot chicken recipe that calls for boneless, skinless chicken breast but all I have is half breasts with bone and skin. Can I just remove the skin and leave the bones in and cook it in the crock pot like the recipe? The chicken will be shredded before serving. Will the bones effect the cooking of the meat? Or do I really need to take the time to remove all the bones before cooking?

To make stock place chicken bones in a crock pot, fill with water and turn on low over night. If you don't have a crock pot use a stock pot and simmer all day. Strain out bones, set broth in the fridge to cool over night. The fat will rise to the top and form a hard white layer. Skim this off. Bring the stock back to a boil and add chopped carrots, potatoes, meat and any other veggies you like. Add salt, pepper, garlic and other seasonings to taste. Mix up dumpling recipe and drop on top of the soup. Cover and simmer for 15 min. Dumpling recipe 1 1/2 cups flour 1/2 tsp salt 3 tsp baking powder 1/4 cup butter, lard or shortening 1/2 cup cold water Mix the dry together, cut in butter. Add water, stir until it just sticks together.

Best answer:

Answer by motroo
If you are doing a whole chicken you can stuff it with rosemary and a few onions.(in the produce section of the grocery store), then salt and pepper on the outside, and onions on top. I would only add a small amount of water to the bottom of the crock, cover it and cook until done.

Question by suedapooh: What is your best chicken slow cooker recipe that is somewhat healthy too?
I just bought a slow cooker and need some good recipes that aren't going to give the family heart attacks. I'm also not much of a gourmet, so easy is a must. Help!

Best answer:

Answer by quit it!
Chicken Stroganoff - VERY delicious!!

4 skinless, boneless chicken breast halves - cubed
1/8 cup margarine
1 (.7 ounce) package dry Italian-style salad dressing mix
1 (8 ounce) package cream cheese
1 (10.75 ounce) can condensed cream of chicken soup

Put chicken, margarine and dressing mix in slow cooker; mix together and cook on low for 5 to 6 hours.
Add cream cheese and soup, mix together and cook on high for another 1/2 hour or until heated through and warm. serves 4
///\\

Baked Slow Cooker Chicken - also VERY good

1 (2 to 3 pound) whole chicken
salt and pepper to taste
1 teaspoon paprika

Wad three pieces of aluminum foil into 3 to 4 inch balls, and place them in the bottom of the slow cooker.
Rinse the chicken, inside and out, under cold running water. Pat dry with paper towels. Season the chicken with the salt, pepper and paprika, and place in the slow cooker on top of the crumbled aluminum foil.
Set the slow cooker to High for 1 hour, then turn down to Low for about 8 to 10 hours, or until the chicken is no longer pink and the juices run clear. serves 6
///\\
Slow Cooker Chicken and Dumplings - sorry for all the recipes, but this is also REALLY good

4 skinless, boneless chicken breast halves
2 tablespoons butter
2 (10.75 ounce) cans condensed cream of chicken soup
1 onion, finely diced

Question by bethels4_2007: How long do you cook Homade Chicken Noodles for in a slow cooker/crock pot?
I have the recipes for Homade Chicken Noodles for the stove top and was wondering if I could get someone to please try to help me on how exactly to cook it in a crock pot???

Best answer:

Answer by grace
CROCK POT CHICKEN NOODLE SOUP

1 whole chicken (2 1/2-3 1/2 lbs.)
3-4 cans Swanson chicken broth
1 (8 oz.) pkg. frozen mixed vegetables (corn, zucchini, carrots)
1 (8 oz.) pkg. lg. egg noodles, cooked
Salt and pepper to taste

Turn crock pot to high position. Wash whole chicken and clean out insides. (No need to keep innards). Place whole chicken in crock pot, cover and cook on high for 3-4 hours or until chicken falls off bones. Remove chicken, let it cool.
While chicken is cooling, put 3-4 cans of chicken broth into the crock pot and change temperature to low. Next de-bone entire chicken and put into crock pot with broth. Add frozen vegetables and spices and cook on low for 1 hour. During that time, cook egg noodles according to package directions. When the noodles are done, add them to the crock pot and season to taste. Cook 1/2 hour longer.

Serves 8-10.

I love this recipe because it can be used for a variety of things. It also freezes well for later use. Ingredients: -[Uncooked] chicken breasts (I used 3 in the video and that made enough to use in 3 meals for my husband and I) -Chicken broth (Water can be substituted) -1 Can of drained corn -2 Jalapenos -Cilantro -Lime -Couple cloves of fresh garlic -1 Small onion -Seasonings: chili powder, garlic powder, cumin, oregano You can easily manipulate the amount of everything on the ingredients list to tweak the flavor, or if you're cooking a larger quantity. If you want to start this before you leave for work (or whatever else) for the day, you can cook it on LOW for 8 hours (instead of HIGH for 5). I also didn't say this in the video, but I turned mine off after 4.5 hours because my husband had "hunger pains that were sticking like duct tape". Ha.

Sweet and Spicy Chicken

        Sweet & Spicy Popcorn Chicken

Try this just once and your family and friends will ask for it again and again. To start you will need these ingredients:

1 3-5 lb. bag of breaded chicken nuggets (if you prefer you can make them from scratch but the pre-breaded ones are very good for this dish and easier as well)
a 16 ounce bottle of apple juice or apple cider
2 cups of dark brown sugar
1/4 cup molasses
1/2 teaspoon ginger
4 tablespoons Texas Pete cayenne pepper sauce
parchment paper

The Chicken

Fry or bake the chicken. If you want less fat then bake the chicken covered with foil in a 350 degree oven for 20-25 minutes or until it reaches internal temperature of 165 degrees Farenheit. Keeping it covered will ensure that it is moist for the second step in preparation. If frying the cook in batches for 4-7 minutes (again until 165F) and hold covered for step 2.

The Sauce

To make this really delicious sauce first pour the apple juice into a sauce pan or stock pot that is large enough to hold the sauce and some of the chicken as well. Add the brown sugar , ginger and molasses. Stir with a whisk until the sugar is thoroughly dissolved. Add the pepper sauce and bring to a boil. Reduce heat to medium and cook until reduced by about 1/3. Now put the pre-done chicken in and stir until evenly coated. Place chicken on parchment papered sheet pans and bake at 400 degrees Farenheit for 8-10 minutes, then you are ready to serve.

Serving Suggestions:

The best way I have found to do this is to place the chicken on a large serving platter with small crocks of Ranch and Bleu Cheese dressing in the center. It also is complemented well by a platter of crudites and cheeses. I hope that you enjoy this dish as much as we have and for now, May God bless and keep each and every one of Y'all.
