shannonblogs.com In between shifts at work, and within 20 minutes, I put together 3 recipes for several meals: Mrs. Ringles Roast, Beef Chili, and Stock for Vegetable Beef Barley Soup. Mrs. Ringles Roast 1 lb beef (brisket is best but any cut is fine) 1/2 c mustard 1 package Lipton Onion Soup (I put together my own since Lipton has MSG in it) Place beef in crock pot fat side up (if there IS fat). Speak mustard on top of roast. Sprinkle dry soup mix on top. Slow cook on high for 4-5 hours. Serve with rice, noodles or for a low carb option serve with salad. Leftovers are great for sandwiches and unwiches (lettuce as bread) Beef Chili 1 TBSP olive oil 1/2 lb beef cut into 1" chunks 1 white onion, chopped 1 garlic glove or 1 TBS garlic powder 1 bunch cilantro, chopped 1 tsp onion salt 1/2 tsp cumin 1/2 tsp chili powder 1/4 tsp cayenne 1/2 tsp tumeric 1 16oz can fire roasted tomatoes 1 6oz can chopped green chiles 1 8 oz can red kidney beans Heat olive oil in large dutch oven or soup pot. Saute onions til soft. Add beef and cook til it just gets color. Add cilantro and remaining spices. Stir. Add remaining ingredient and bring to boil, then reduce heat to simmer. (Optional: can add 1 c. chopped zuccini after cooking the beef). Cook for 10 minutes. Serve topped with grated cheddar/jack cheese, a dollop of sour cream and some chunks of fresh avocado. When I make my red bliss potatos, I like to make my own garlic butter and use that in place of regular butter. If you REALLY like garlic like I do, add in some crushed garlic to the finished potatos too.
I make garlic butter by crushing 2 whole cloves in a pan with 3 lbs of buter. when it all melts, strain butter through a fine wire strainer to remove all the garlic and pop back in the fridge to use when ever. Makes great garlic bread

Hi Jenny! I buy most of my meat at Costco in bulk and cut it up. I usually look for as little gristle as possible and a lot of fat marbling, but on this diet, other than steak, I’ve tried to cut down on the fat marbling.
For the soup, I purchase beef soup mix in the bulk room of the local natural foods store. I use that and dried onions. That’s it.
