Question by Pete: Crock Pot BRISKET - Fat side UP or DOWN?
When cooking BRISKET in a Crock Pot should I put it in with the Fat side UP or DOWN? Thank you.

I'd say with fat side down, to help prevent the meat from cooking too fast, or too much.

Cook it fat side up – you want the fat to self baste the meat, keeping it moist as it melts down over the brisket.

Meats with a fat side are always cooked with the fat side up. Unless you are browning off or searing the meat before hand in a hot skillet. Then it’s fat side down to get that browning or carmelization process to give you that nice rich flavor. Be sure to deglaze the pan and get all those brown bits out of the skillet. Use part of the liquid called for in the recipe and simmer and scrape. Then add that to your crock pot.
That way the fat cooks and works it way down through the meat giving you a more tender and juicy result. The fat also helps prevent the top of the roast from drying out.
